Tom Yum Soup with Prawns
This soup is super fresh and satisfying, add wholewheat noodles or brown rice for a more filling dish!
Serves 4
1 litre veg stock
30g tom yum paste
100ml tinned coconut milk
225g chopped tomatoes
100g shiitake mushrooms, sliced
300g raw king prawns
2 tbsp fish sauce
1 tbsp lime juice
coriander to garnish
fresh chilli to garnish
Wholewheat noodles or brown rice to serve
Ingredients
Pour the stock into a pot, add the tom yum paste and bring to a boil.
Add coconut milk, tomatoes and mushrooms, and cook for about 5 minutes.
Next, add the shrimps, and cook for about 1 minute on low heat. Season with fish sauce and lemon juice.
Garnish with fresh coriander and chilli.
Serve with wholewheat noodles or brown rice and a wedge of fresh lime.
