The Best Tofu Scramble

This makes a lovely savoury breakfast and provides plenty of plants for your first meal (plus it’s DELICIOUS)

Serves 2

  • 1 tablespoon olive oil

  • 300 g smoked tofu, crumbled

  • 1 red pepper, cubed

  • 1 small onion, diced

  • 1 large clove garlic, crushed

  • 1 teaspoon paprika

  • 1 teaspoon cumin

  • 1 teaspoon turmeric

  • 4 teaspoons nutritional yeast

  • Salt and pepper, to taste

  • Fresh parsley, to serve

  • Rye sourdough or bread of choice, to serve

Ingredients

  1. Heat the olive oil in a large frying pan over medium heat.

  2. Add the diced onion and red pepper. Cook for 5–7 minutes until softened.

  3. Add the crumbled smoked tofu and crushed garlic. Stir well and cook for a further 3–4 minutes.

  4. Sprinkle in the paprika, cumin, turmeric, salt, and pepper. Add the nutritional yeast and mix thoroughly.

  5. Cook for another 5 minutes, stirring occasionally, until heated through and slightly golden.

  6. Serve on toasted rye sourdough (or bread of choice) and finish with fresh parsley.
