Spiced Apple & Blueberry Cake
A delicious, healthier cake that satisfies a sweet tooth and delivers on comfort! Enjoy with a dollop of 5% Greek yoghurt for an extra feeling of indulgence.
Makes 9-12 squares
2 large eggs
75ml extra-virgin olive oil
120g coconut sugar
1 tsp vanilla
125g gluten free flour (I used Doves)
1 tsp baking powder
0.5 tsp baking soda
1 tsp cinnamon
0.25 tsp nutmeg
pinch salt
2 small apples (approx 175g) chopped, leave peel on for extra fibre
80g blueberries
50g chopped walnuts
Ingredients
Preheat oven to 160C and line or grease a 20x20cm cake tray.
Add eggs, olive oil, coconut sugar and vanilla into a large mixing bowl and whisk to combine.
Sieve flour into the mixing bowl, add baking powder, soda, cinnamon, nutmeg and salt and whisk gently to combine.
Add chopped apples, blueberries and walnuts to the mix and stir through to distribute evenly.
Place in centre of preheated oven and cook for 35-40 minutes until golden brown and cooked through (a skewer should come out clean from the centre of the cake)
Allow to cool slightly before cutting into squares, serve with extra blueberries and a dollop of Greek yoghurt. Enjoy!
