Gut Friendly Power Balls

A simple recipe for a healthy dessert or satisfying snack, packed full of different plant fibres to keep your microbiome happy and fed! Make ahead of time and freeze for a great go-to snack throughout the week!

Makes 24 power balls

  • 20 medjool dates

  • 50g macadamia nuts

  • 2 tbsp extra virgin olive oil

  • 25g maple syrup

  • 3 tbsp water

  • 2 tsp vanilla

  • 75g hazelnut butter (or nut butter of choice)

  • 2 heaped tbsp milled flaxseed

  • 50g cocoa powder (plus more for rolling)

  • 150g ground almonds (plus more for rolling)

  • Pinch salt

Ingredients

  1. Line a baking tray with greaseproof paper.

  2. Place dates, macadamia nuts, olive oil, maple syrup, water and vanilla to a food processor and blitz into a paste.

  3. Add the remaining ingredients and blitz until well combined.

  4. Using slightly damp hands roll the mix into 24 even balls.

  5. Roll into cocoa powder or ground almonds to finish.

  6. Store in the fridge for up to 7 days or the freezer for up to 3 months.
